Beer Battered Fillets Picatta ft. Gorton's Seafood

It’s Seafood Time with @gortonsseafood and @walmart!
The average American only consumes half the amount of seafood that they’re supposed to. The USDA recommends eating seafood at least 2x per week, and I for one am always happy to have as much as possible! @gortonsseafood makes it super easy to swap seafood in for traditional proteins you would usually cook with- a great way to incorporate more into your diet!
On my last @walmart run I picked up Gorton’s Beer Battered Fillets and jazzed them up with a homemade Picatta sauce I would usually put over chicken. I served it over white rice and steamed string beans and had a delicious meal in minutes. Pick some up in the freezer section on your next visit to @walmart and try it out!

Gorton’s Beer Battered Fillets Picatta
Serves 2
Ingredients:
-4 @gortonsseafood Beer Battered Fillets
-2 tbsp unsalted butter
-1/4 cup chicken stock
-1/4 cup dry white wine
-2 tbsp fresh lemon juice
-1 tbsp capers, drained
-t tbsp fresh parsley, chopped
-kosher salt
-fresh ground black pepper
Directions:
1. Preheat the oven to 425F.
2. Place 4 @gortonsseafood Beer Battered Fillets on a foil lined baking sheet sprayed lightly with olive oil.
3. Place in oven, cook for 10 minutes, flip, cook for 9 minutes more.
4. While fillets cook, melt butter in a small skillet over medium heat. When it starts to brown, add chicken stock, wine, and lemon juice and whisk. Simmer and stir occasionally for about 8 minutes. When reduced by half, add capers, parsley, a pinch of salt, and fresh ground black pepper to taste. Whisk for 2 more minutes to combine.
5. Plate 2 fillets over your favorite rice or pasta and vegetable and pour sauce over. Enjoy!
